Aluna bean-to-bar: Chocolate with coconut sugar, medicinal mushrooms, and ethical origin

Aluna bean-to-bar is an exceptional, handcrafted chocolate made from cacao beans that we personally source from farmers and indigenous communities in Central and South America. It is sweetened exclusively with coconut sugar - a natural and gentle alternative that preserves a delicate sweetness without energy spikes.

Selected recipes are enriched with medicinal mushrooms such as reishi, lion’s mane, or chaga, which support focus, immunity, and mental balance.

Traditional processing...

Our cocoa beans are processed in a melanger using a traditional slow method that preserves their natural character to the greatest extent. After gentle roasting and peeling, the beans are placed into the melanger, where granite stones gradually grind them into a smooth, liquid mass.

This process takes many hours and allows the full aroma and deep flavor notes typical of Bolivian Silvestre beans to develop. Slow grinding further refines the texture and balances the flavor, resulting in an exceptionally pure and aromatic cocoa mass ideal for premium chocolate.

Steiner & Kovarik owns a unique cocoa plantation

on a small piece of the Bolivian jungle, where we cultivate rare, original varieties of Amazonian cacao. Thanks to the untouched environment, rich biodiversity, and traditional farming methods, cocoa beans of exceptional quality thrive here. The plantation is managed in close cooperation with local communities, who carry out the hand-harvesting and gentle processing of the fruit.

This direct oversight of origin allows us to guarantee complete transparency and control over every step — from cultivation to the final chocolate. The result is cocoa beans with a rich aroma, complex flavor, and the authentic character of Bolivian nature.

are among the rarest and finest in the world. They come from wild-growing cacao trees in the Amazon rainforest, where they are hand-picked by local farmers.
